Strawberry, Honey and Pickering’s Gin syllabub

Serves 4

300g fresh strawberries, hulls removed, washed and dried (reserve 4 with the hulls for decoration)
300ml double/heavy cream
100ml Pickering’s Gin (less if that sounds too much for you)
2 teaspoons of honey

  1. Whip the cream, gin and honey in a large bowl until soft peak stage
  1. Cut the strawberries into quarters
  1. Choose pretty glasses and layer the strawberries and cream mixtureequally between four glasses
  1. Serve with a sprinkle of icing sugar sugar and a whole strawberry

So easy, yet so delicious!
