We need our artisan producers
Those of you who are regular readers of our blog – and visitors to our restaurants – will know that we are hugely passionate about using the very best local ingredients. In fact, we even have a map featuring all 70+ of our Scottish suppliers right here.
You may also have been following the news about Errington Cheese and the debate surrounding the use of raw milk in artisan cheese-making. As someone who loves these products, I would hate to see them disappear, and I believe that, as an industry, we have to defend and support small producers as much as possible or they will do just that.
