This week’s recipe in the Daily Record is Carina’s Blueberry Muffins
365g plain flour
1 tsp baking powder
125g golden caster sugar
2 large eggs
125g full-fat natural yogurt
125g full-fat milk
125g unsalted butter, melted
icing sugar, to decorate
Preheat the oven to 180ºC/350ºF/Gas 4.
Sift the flour and baking powder into a large bowl and mix in the sugar.
In another bowl or jug, mix together the eggs, yogurt, milk, melted butter and blueberries.
Very quickly add this to the flour and mix together very loosely. You don’t want the mixture to be smooth like a batter; it should be lumpy and uneven.
Spoon into 12 muffin papers sitting in a muffin tray and bake in the preheated oven for 12 minutes until risen and golden. Remove from the oven and cool on a wire tray.
Serve with a generous sprinkle of icing sugar.
