1 liter double cream
Juice of 3 large lemons
275g caster sugar
- Bring the cream and the sugar to the boil in a large pan.
- Allow the cream to boil for 3 minutes.
- Remove from the heat and whisk in the lemon juice.
- Strain and pour into pretty glasses.
- Allow to set in the fridge overnight.
- Serve with a little lightly whipped cream.
