Lemon Posset

Ingredients

Makes 6

1 liter double cream
Juice of 3 large lemons
275g caster sugar

Method

1. Bring the cream and the sugar to the boil in a large pan.
2. Allow the cream to boil for 3 minutes.
3. Remove from the heat and whisk in the lemon juice.
4. Strain and pour into pretty glasses.
5. Allow to set in the fridge overnight.
6. Serve with a little lightly whipped cream.
